Chef's Pili-Pili Stuffed Avocado with Prawns

Ingredients
- 1 large avocado, halved and diced
- 150g king prawns, cooked
- 50g fresh basil, finely chopped
- 50g baby plum tomato, finely chopped
- 50g green pepper, skin peeled and finely diced
- 50g spring onion, finely chopped
- 50g red onion, finely chopped
- ½ tsp lemon juice
- 1 tbsp Tropical guava chilli sauce
- 1 tsp extra-olive oil
- ½ tsp sea salt
Method
Mix together the king prawns, tomatoes, peppers, onions, diced avocados, olive oil and lemon juice. Add Tropical guava sauce and sea salt to taste.
Halve the avocado, remove the stones and brush the exposed flesh with lemon juice to stop discolouration. Fill the hollows with the king prawns mixture, serve on a bed of mixed leaves salad. Voila!
