Chef's Pili-Pili Rumba BBQ Chilli Pork Ribs
Easy oven baked ribs is a recipe that everyone will love! Serve them with black beans salsa and diced fried yams.

Ingredients
- 1.5kg pork ribs
For the Chef's smoked BBQ chilli sauce
- 3 tbsp Rumba BBQ chilli sauce
- 1 tsp red wine vinegar
- 1 tsp dark brown sugar
- ½ garlic puree
- 2 tbsp hot smoked paprika
- 1 tsp ground ginger
- 1 tsp ground black pepper
Method
Prepare the rub and bake the ribs:
Combine Tropical guava sauce, ketchup, vinegar, ginger, garlic and paprika in a large shallow ceramic dish. Add ribs. turn to coat. Cover and refrigerate for 6 hours or overnight, if time permits. Preheat oven to 160◦C/140◦C fan-forced. Line a larger baking dish with foil. Place a large wire rack over dish.
Transfer ribs to wire rack, reserving marinade. Cover dish. Baker for 1 hour 20 minutes, basting with reserved marinade and turning every 30 minutes. Increased temperature to 200◦C/180◦C fan-forced. Remove cover. Bush with marinade. Bake for 25 minutes or until browned.
Meanwhile, strain remaining marinade into a small saucepan. Bring to the boil over medium-high heat. Reduce heat to medium. Simmer for 6 minutes or until thickened. Top ribs with reduction marinade and served with diced fried yams, and black beans salsa
Yams
Yams can be categorised under two labels ‘soft and hard’. When cooking yams they should be cut in slices half an in inch thick or could be mashed. Yam is as versatile as potatoes.
