Chef’s Pili-Pili British Mint Easy Pork Loin

Ingredients
- 2 Pork loin (6oz)
- ½ tsp sea salt and ground white pepper
- 1 tsp Paprika
- 1 tbsp vegetable oil
- 2 tbsp British mint chilli sauce
- 1 tbsp finely chopped fresh mint
Method
Large bowl. Whisk together British mint chilli, paprika, salt and mint. Add pork, turning to coat; cover and refrigerate for 15 minutes or up 6 hours. Place pork on greased grill over med-hi heat; brush with remaining marinade.
Light a grill or preheat a grill pan. Remove the pork from the marinade and scrape off any excess. Lightly brush the grate with vegetable oil. Grill the loins over a medium-hot fire or in the grill pan, turning occasionally, for 20 to 25 minutes, or until an instant-read thermometer inserted in the thickest part registers 140° for medium. Transfer the loins to the plate. Voila!
