Chef's Pili-Pili British Mint Curly Kale Salsa (Vegan)

Ingredients
- 100g Curly kale, cooked and finely chopped
- 1 tsp sweet basil, finely chopped
- 1 tsp gherkin, finely chopped
- 1 tsp red onions, finely diced
- 1 tsp extra-virgin olive oil
- 1 tsp spring onions, finely diced
- 1 tbsp mixed peppers (red, green, and yellow) finely diced
- 1 tsp white wine vinegar
- 1 tbsp extra-virgin olive oil
- 2 tbsp British mint chilli sauce
- ½ tsp sea salt and ground black pepper for seasoning
Method
Meanwhile, combine the kale, spring onions, peppers, basil, red onions, gherkin, white wine vinegar, olive oil, British mint sauce, and some seasoning in a bowl. Set aside until ready to serve.
