GREEN MINT CHILLI CHICKEN WINGS
INGREDIENTS
Marinade
- 200g Chicken Wings, halved at the joint
- 1 tsp vegetable oil
- 1 tsp paprika
- 2 tbsp Green mint chilli sauce
- ½ tsp sea salt and ground white pepper
METHOD
Combine the oil, paprika, pepper, sea salt, and Green mint chilli in a large bowl. Place the chicken wings in the mixture and toss thoroughly until they’re evenly coated. For best flavour, let the wings marinate in the refrigerator for a few hours or, preferably, overnight if possible.
Preheat the oven to 180◦C /160◦C/gas 4. Drain and save marinade. Arrange wings on a large baking tray and bake for 30 minutes. Discard excess oil, add reserved marinade, and mix well. Increase oven to 200◦C /180◦C/gas 6.
Return to the oven and cook for a further 10 minutes, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a wood platter with salad garnish.
